  • How do I store your chocolate?
    "The best way to store chocolate is in your stomach!" Assorted bonbon boxes should be enjoyed as soon as possible for maximum flavour or up to 3 weeks from receiving them. Products from our chocolate covered selection should be enjoyed within 1 month. Chocolate bars and baking discs can be stored up to 3 months in their original packaging or airtight containers. Generally, for all our products refrigeration is not necessary, so long as the storage area is below 25 Celsius and away from direct heat and sunlight. If the chocolates must be refrigerated please wrap tightly to keep moisture out and bring to room temperature before unwrapping. Chocolate is susceptible to temperature, external odours and flavourings, air and light, moisture, and time. The fat and sugar it contains will absorb surrounding odours. Chocolate should be stored in a dry, odour-free place with good air circulation. Good storage practices help avoid decay, undesired features like fat bloom and sugar bloom, and help extend shelf life.
  • Why does chocolate sometimes get a white layer on top?
    When a thin layer of fat crystals forms on the surface of the chocolate, it is called fat bloom. It means the chocolate has lost its gloss and a soft white layer appears, giving the finished article an unappetizing look. Fat bloom is caused by the recrystallization of the fats and/or migration of a filling fat to the chocolate layer. Storage at a constant temperature will delay the appearance of fat bloom. There is nothing wrong with the chocolate, and perfectly delicious to consume. A quick brush with your fingertips (the warmth of your natural body temperature) melts away the fat bloom cocoa butter layer on top.
  • How should I care for my chocolates once they arrive?
    For best results, our chocolates should be stored in an airtight container placed in a cool, dry place - temperatures between 16 C to 22º Care best. Since we use no artificial preservatives or shelf-life enhancers, we recommend that they be enjoyed within 3 weeks of receipt.
  • Can I refrigerate my chocolates?
    We strongly recommend against storing your chocolates in the refrigerator. The refrigerator environment can adversely affect both the texture and the flavours of our chocolates and refrigeration should only be used if the chocolates are in danger of melting.
  • What does "cacao" (e.g. 41% or 72%) mean?
    Technically, "% cacao" refers to the amount, as a percentage of the total, of cacao bean plus cocoa butter in chocolate. In a bar of semi-sweet or bittersweet chocolate, the remainder is almost all sugar (there is a small amount of vanilla and lecithin). In milk chocolate, the remainder will include milk or milk solids along with some added cocoa butter.
  • What is the shelf life for your products?
    These premium chocolates do not contain preservatives and are best enjoyed within 3-4 weeks of delivery. For best results, store chocolates in a place that is dry and free of any other odours.
  • Is the colour on the chocolate safe to eat?
    Yes, an edible pigment is used to colour the chocolates and my limited palette is FDA Approved for use with food. We use cocoa butter colours only.
  • What is the lead time for larger, custom orders?
    Three to four weeks lead time is appreciated as our chocolates are handmade to order and the packaging is often customized.

  • What is Cacao?
    Cacao is the fruit that chocolate comes from. It grows twenty degrees above and below the equator and originated in central and south America during the Aztec and Mayan civilizations.
  • How long do the chocolates last?
    From point of production, the chocolates last about 4 weeks. Once they leave the shop, we ask that you eat the chocolates within a week because they have left a controlled environment.
  • Are the chocolates created here?
    All the chocolate bonbons and truffles are made in-house, with the room at 18 degrees all with natural spices and fruit purees. They are created daily to ensure freshness and quality, as we don't use any preservatives in the chocolate.
